Ingredients

  • Fish: 1 rat, 1 spider, 1 anglerfish, 1 mackerel, 1 horse mackerel, 1 octopus, 8 crabs, 8 galleys
  • 1 ñora
  • ½ head of garlic
  • Olive oil
  • Salt
  • Saffron
  • 1 jar of crushed tomato
  • 400 gr. of rice
  • 2 litres of water

Preparation

Sauté the ñora and the garlic and set aside to be crushed in a mortar and pestle, adding the tomato and saffron.

Fry the octopus and once fried, add the galleys and crabs, as well as the fish. Add the crushed fish and stir everything together, add the water and leave to boil for about half an hour.

Remove the octopus and cut four octopus legs to fry with the rice in the paella pan.

In a paella pan, fry the rice and the chopped octopus and add the broth strained from the cauldron, and leave it for 20 minutes.

To serve the fish, take half a glass of the stock, 2 raw crushed garlics, mix and add to the fish tray.
