Ingredients (for 4 people)

  • 1/4 kg. of anchovies
  • 150 gr. of Cauliflower
  • 150 gr. of Spinach
  • 1/2 onion
  • 2 ripe tomatoes
  • 2 garlic and parsley
  • 300 gr. of rice
  • 8 tablespoons of olive oil
  • 1 teaspoon sweet red paprika
  • Saffron
  • Salt
  • Fish stock or hot water

Preparation

Sauté the cauliflower and set aside.

Sauté the chopped onion and spinach, when done add the chopped garlic, parsley, grated tomato and a teaspoon of sweet red paprika. Then add the rice, fry it a little and add the hot fish stock or hot water (always double the amount of rice), taste for salt and add saffron. Add the cauliflower and when the paella is just finishing cooking, add the anchovies.
