Ingredients (for four people)

  • Pork meat (trotter, tail)
  • 200 grams veal rib
  • ¼ kg. of dried beans
  • 1 onion
  • 2 leaves
  • 1 carrot
  • 1 turnip
  • 1 sweet potato
  • 200 grams of rice
  • Salt
  • Saffron
  • sweet red paprika
  • Olive oil. 4 tablespoons

Elaboration

The beans are soaked the night before (water with a little salt)
Chop the onion and fry, add the meat, a teaspoon of paprika and the beans.
Add a little water and when it starts to boil, break the boil with a little water, three times.
Add the chopped vegetables and let it cook for a long time.
Finally the rice is added.
